So I’m sharing the way my dad used to make them.

- 3 cooking chorizo sausages, skin off and chopped finely
- 4 large eggs
- 2 medium tomatoes chopped finely
- 1 medium onion chopped finely
- 1 tbsp rapeseed oil
- Salt and pepper to taste
Break the eggs in a bowl and wisk them, put them aside. In a skillet or frying pan heat the oil with medium heat and add the chorizo, cook for 3 min stiring sometimes, add the tomatoes and onion, cook for 3 more min and add the eggs, stir until all the ingredients are combine, add a pinch of salt and pepper and done!
