Recently I have been posting many vegetarian recipes because of my hubby, he doesn’t want to eat meat anymore, in fact, he is thinking very seriously of becoming vegetarian, thing that I am not against, but I am not prepared to do it myself, I have to confess to you that I like meat, in fact, I love a good steak and I am the kind of person that thinks that everything in moderation is the key, so when I buy and eat meat, I usually buy it from my local organic butcher, so in that way I know the animal had a good life and it was well fed. Mondays! Well for me, Mondays err! are a kind of struggle, after a long and busy weekend I usually have problems to wake up in the morning, so I try to find an easy recipe to make and today was one of those Mondays when I just couldn’t wake up, we almost arrived late for school, luckily my children woke me up and we rushed to get ready. Chorizo is a very popular ingredient in a Mexican kitchen. In my mum’s house we always have chorizo and we would eat chorizo in many different ways. I love it and it is one of my favourite Mexican ingredients that I have to have in my kitchen.
