Trio de Salsas (Three Salsas)

I am having some friends for dinner, we are having tacos and I made three types of salsas for them to nibble with some tortilla chips and also to add to their food.

There is a whole culture of salsa making in Mexico, we have lots of different salsas depending on the region. Today I am making three basic salsas: Morita chilli, arbol chilli and Tomatillo. They are easy to make and believe me, I made them in 15 min.

There is a saying that says, if a salsa makes you cough while you are making it, that means that it is a good salsa and believe, it is true! I coughed a lot, specially when I did the arbol one, gosh! Those thin chillies are dangerous, but delicious.

So here are the three recipes!

SALSA DE TOMATILLO CON JALAPEÑO

This salsa is also known as salsa verde. You can use jalapeño or serrano. All the ingredients are raw, all you have to do is blend them in a blender, add salt and listo! Done!

Ingredients

  • 6 fresh tomatillos
  • 1/2 white onion
  • 3 jalapeños or more if you want it more spicy
  • A small bunch of fresh coriander
  • 1 small garlic peleed
  • 5 tbsp water
  • Salt to taste

Method

  1. Chop everything roughly. Add the ingredients in a blender. Blend until getting the consistency you like.
  2. A lot of people like this salsa with some texture, so the finish is up to you. I made mine very smooth.
  3. Add as much water as you want to make it runnier.

SALSA DE CHILE DE ARBOL

Ingredients

  • 10 arbol chillies
  • 2 tomatoes
  • 1/2 onion
  • 1 small garlic clove
  • 2 tbsp cider vinegar
  • 5 tbsp water
  • Salt to taste

Method

  1. Char all the vegetables. Keep the garlic skin on to avoid burning it. Use a frying pan to char them. No need to add oil or anything. Just put the tomatoes, onion and garlic on the hot frying pan and char them until blacken. Peel the garlic before adding it to the blender.
  2. For this salsa I didn’t toast my arbol chillies, but if you want you can do it. Just do it quickly, maybe one minute.
  3. Add everything in a blender, add salt and cider vinegar and blend until smooth. Add the water to make it runnie.

SALSA DE CHILE MORITA

This salsa is delicious. I left mine a bit thick so we can eat it with our totopos (tortilla chips) without worring to spill it. The morita chillies are delicious, if you can’t find morita chilli you can use chipotle chilli. The flavour will be different as both chillies flavour are different, but you will have a trio of salsas for your party.

Here in UK is quite difficult to find morita chillies, I brought mine from Mexico, so that is why I am giving you another option.

Ingredient

  • 4 morita chillies
  • 2 tomatoes
  • 1/2 onion
  • 1 small garlic clove
  • 2 tbsp cider vinegar
  • 1/2 cup water
  • Salt to taste

Method

  1. Char all the vegetables. Keep the garlic skin on to avoid burning it. Use a frying pan to char them. No need to add oil or anything. Just put the tomatoes, onion and garlic on the hot frying pan and char them until blacken. Peel the garlic before putting it into the blender.
  2. Soak the morita chillies in hot water. When they are soft, they are ready to make the salsa. I left mine for 10 min in the hot water.
  3. Add all the ingredients in a blender and blend until smooth.

Listo!

Provecho!

  1. Todo bien aquí, Karla! Hemos tenido un invierno muy tranquilo en cuanto al clima y eso me hace muy feliz. Casi no me gusta la nieve y a Roberto no le gusta tampoco, jeje. Somos un par de pajáros tropicals, jaja 😉 Married life is wonderful! We have been enjoying our time together, and the best part is we both love to cook. It makes for some great dinners. Muchos saludos y abrazos!
