Today I am in the mood of spicy food and I remember about this recipe, Camarones a la Diabla, in English you would call them Devil Prawns, I guess because they have tons of chipotle!!
So for this recipe we will need prawns, good prawns, peeled and ready to cooked, then we will smothered them in a creamy chipotle marinade, then fried them with a bit of onion and lots of garlic and listo!! Good morning lovely people! Today’s recipe is a classic dish from Jalisco, Carne en su Jugo and if you translate it into English, it means, beef in its own juices, but here is the thing, the meat is not really cook in its own juices, this lovely and delicious dish goes with a yummy salsa that is prepared with tomatillos, then when you serve it, you need to serve it with fresh frijoles de la olla (beans from the pot), so if you plan to cook this dish, put your pinto beans to soak early in the morning and then cook them, so they’re ready to have them with the beef. It is snowing outside and I have been in my kitchen all morning doing this and that, well, I have been mainly cooking to be honest. I really love days like today, the weather is freezing, so it is nice to stay at home and do what you love the most and for me is cooking, so I put on my favourite music, today I fancied listening to so classic rap or hip-hop, so I am listening to Cypress Hill, yes! I do, sometimes, listen to that type of music and yes! My favourite song is their hit, “Insane in the mainbrain” LOL, I grew up with a brother that loves this type of music, so I guess I had to like it! But this doesn’t mean I love it.
