I love simple pleasures and making my life easier in the kitchen, because, let’s be honest, mum’s life is full of do’s and sometimes we don’t have time to cook an elaborate dinner. I really admire those mums that after a whole day at work, they still have time to come home and cook a feast.
I started working with the hubby two months ago and I am so tired by 5 pm that sometimes I can’t even think of what to cook. But I have to confess that my kitchen is the place where I go to relax. I turn on my music and close the door and I just do my cooking, so today is one of those days that I went into the kitchen to relax and listen to Natalia Lafurcade, my favourite Mexican singer, who is the one that sings to me while I am cooking and I decided to cook something quick and a salad is the quickest, delicious, healthy thing that I can think of, specially if it has avocado.
- 2 perfectly ripe Hass avocados
- 1/2 red onion
- 2 tomatoes
- 1/2 chopped fresh coriander
- 1/2 chopped chives
- 1 fresh jalapeño chilli
- Juice of one lime
- Salt to taste
- 3 tbsp of olive oil
Chop all the ingredients very finely apart from the avocado.
Cut the avocado more chunky, then combine all the ingredients in a salad bowl and add the seasoning.
Mix very well and serve immediately. It will go well with any protein option!
