Taquitos Dorados de Champiñones y Papa (Mushrooms & Potato Fried Taquitos)


This is a quick recipe for those days when you are in a hurry, but you still want to have a great dinner.

Fried Taquitos are one of my favourite antojitos for those days when you want to eat something comforting. The tortilla gets filled up with a yummy filling and then fried in oil for later on being filled with shredded lettuce, avocado slices and radishes and to topped up with a nice dollop of crema and queso fresco or in this case, crumbling feta and to finish them off a good scoop of a good spicy salsa! Yum!

I made my Taquitos in less than an hour and the wonderful thing is that, even thought, they are fried, they are quite healthy because they have a lot of veggies.

My children love this recipe very much. Emilio had three Taquitos! Which is a lot for a little tummy.

Makes 15 Taquitos


  • 15 cold tortillas
  • 2 large white potatoes
  • 250 gr mushrooms
  • Salt to taste
  • Pinch of oregano
  • 2 cups of avocado oil or vegetable oil

To garnish

  • 1/4 shredded lettuce
  • 1 avocado sliced
  • 6 radishes sliced
  • 1/2 cup of crema (sour cream)
  • Queso fresco or feta
  • Spicy salsa


Peel and cut the potatoes in chunks and cook them in hot boiling water until soft. Then mash them very well and season with salt. Set aside.

Chop the mushrooms finely. Heat a frying pan and add 2 tbsp of oil, once hot, add the mushrooms. Season with salt and add a pinch of oregano. Fry for 10 min at high/medium heat. Set aside.

Mix the mushrooms with the mashed potato and set aside.

Chop all the vegetables to garnish the taquitos.

Then heat another frying pan and start heating the tortillas slightly, so they are flexible and they don’t break when they are fill with the mushroom and potato mix. I usually heat one tortilla at once and fill it straight away.

To fill the tortilla. Get a warm tortilla, put some filling on one side and fold the other side. Set aside ready to be fry later.

While you are filling the tortillas, add the rest of the oil onto another frying pan, heat it to medium heat and once hot, add the filled tortillas. Maybe fry 3 or 4 at a time. Fry for 2 min on one side or until golden brown and then using some kitchen tongs, turn each taquito to fry the other side.

When the first batch is fried, place the taquitos onto a collider to drain the excess of oil. Then continue frying the rest.

Once all are fried, fill each one with shredded lettuce and place them on a big platter and scatter some avocado and radishes slices as well as the crema and feta. Place the platter on the dining table and put some spicy salsa on the side, so everybody make their Taquitos as spicy as they want!
