This is a new recipe for me, when we eat rice at home, I usually cook red rice or just plain, but my sister gave me this recipe and I thought it would go very well with the cabbage Mexican Style dish I cooked today for our dinner.
I was a bit nervous but the finish dish was absolutely and utterly delicious, everybody loved it at home, my children thought they were eaten broccoli rice, which is one of their favourite veggies.

Ingredients
- 1 cup of basmati rice
- A quarter of small onion finely chopped
- 1 tbsp rapeseed oil
For the green sauce
- 1 green pepper toasted, peeled and deseeded and cut in strips
- 1 clove peeled garlic
- Half a small onion
- Half bunch or 28 gr. bag coriander
- 2 cups Water or chicken stock
Method
In a blender put all the vegetables for the sauce and blend until all the ingredients have mix very well, if you need to add some water to help to blend, do, then add the rest of the water or chickens stock and set the sauce aside.
Heat the oil in a pan and add the onion and fry for one minute, add the rice and fry for 3 min and add the sauce, stir and low the heat to very low and cover. When the water has evaporated, check if the rice is cook, if not, add a bit more water and try to get the water to the bottom of the pan and cook a bit longer, it will take around 15 min approx for the rice to cook. Serve with some coriander leaves.
