Mexican mum’s special treat for when a little one is feeling a bit poorly are either a Caldito de pollo (chicken soup) or Sopita de Fideo (fideo soup).
Here at home my little ones love Sopita de fideo, especially my sweetie pops Miah, she absolutely adore this soup and today she had a rough day, so I made some Sopita for her. It is the recipe that makes her feel good and the best way for me to tell her that everything is going to be fine.
I remember when I was a child, my mum would always make us caldito de pollo for those days when we were not feeling well. I loved it so much, that even these days, every time I cook Mexican chicken soup, it always takes me back to my childhood.
This fideo soup recipe is super quick, for those days that you are mega busy, but still want to cook a special and delicious soup. I use frozen sweetcorn and peas, which speed everything.
2 cups of fideos or vermicelli
1/2 white onion chopped
1 garlic clove peeled
2 tbsp vegetable oil
750 ml chicken stock or 750 gr water plus an organic chicken stock cube
Pinch of salt
1/2 cup frozen sweetcorn
1/2 cup frozen peas
Heat the oil in a large saucepan at medium heat.
Then add onion and fry for 3 min, the add the garlic clove and the fideos. Fry the fideos for 5 min stirring all the time, so they do not burn.
Add the chicken stock and turn the heat down. Add more salt if needed.
Then after 5 min, add the sweetcorn and peas. Cook for further 5 min or until the fideos are soft.
Serve with some crumbled feta and a squeeze of a lime wedge and if you want to add extra flavour, add a bit of your favourite spicy salsa.
Enjoy this delicious soups with some roll up homemade corn tortillas with a bit of mayo and slices of avocado! Delicious!
